Q: Can you write on these without the ink bleeding?

The ink should not bleed through the stick, but it may smudge.

Q: How thick are the sticks and how wide?

I would say about a thumb wide and the popsickle is very thin to the point it can be cut with ordinary scissors!

Q: What's the thickness?

I measured the thickness, and it is barely 1/16th inch, with is, at most, .06 inch. See photos in my review.
