Dehydrating Garden Vegetables
I like the top window so I can see how dry the vegetables are before opening the door. I also like the front door for the same reason. The drop-down slide in door is nice. I can slide it in, out of the way or leave it out to help catch any falling dried vegetables.Setting the temperature and timing is very easy. I used it so far to dry my sliced onions 1st and it worked great. I hand crumbled them and put them in dark 1/2-gallon jars. I did set the temperature about 5 degrees higher than what the book called for in order to get them crispy dry. The lower temp leaves them leathery dry. Following online directions of blanching first. I dried my garden-fresh sliced potatoes and squash too.So far, I am completely satisfied with my Excalibur dehydrator.UPDATE: 8/15/25 This morning we had it running 8hours but came home it was off. The power panel isn't working on it. NO lights at all, nothing.

Very impressed with it. Have already done Bananas Chips & Pineapple Rings. Grandson really liked both.

Great product. Spend the extra money and get the one with more shelves. Great for raw foodie.

Works well but tastes and smells like chemicals
I've had my dehydrator for four months now. I washed all of the racks and the plastic tray, the silicone mat, and I washed down the interior walls with warm water and soap. I have dehydrated apples, tomatoes, herbs, and much more and run the unit for many cycles. The food still smells and tastes like chemicals. I've checked everything and do not see any plastic material like stickers left anywhere. What do I do? This unit dehydrates very nicely, but I cannot get rid of that awful taste or smell that's leaching into my foods. I ended up hanging my dill and oregano to air dry. It's an expensive investment so not being able to use it is a waste ... as is dehydrating foods I can't eat, especially with today's high prices for produce!

Stick with the older version
This is my second Excalibur dehydrator. I went with the performance series model due to promises of faster drying from new technology. What a disappointment!I am dehydrating the exact foods I have dried successfully for years, in the exact same quantities. With the performance series dehydrator, the food at the center of the trays stays or becomes extremely wet and ultimately grows mold. I've thrown out several batches of food due to the lack of adequate air circulation. I even cranked up the temperature but nothing works. At this point, I plan to dig out, clean up, and repair my old non-performance series Excalibur dehydrator so I don't have to throw so much food away in the future.I have recommended Excalibur dehydrators for many years. Now my recommendation will be to do whatever is necessary to find or maintain the older model because the new performance series doesn't dehydrate at all.

if you want the best this is it
I have used it almost everyday for a solid month to dehydrate a different type of fruit from pineapple, mango, different varieties of apples, kiwi, strawberries, etc. Basically you just set the temp and duration on a digital readout and come back when it's done. Super easy to use and results are outstanding. Glad I purchased the 10 tray model as I am constantly filling each and every tray up during each session. If you get the smaller one you will wish you got the bigger one. There is no such thing as cheap quality. Highly recommend without reservation.

Best dehydrator in it's price class!
We run two of these almost 20 hours a day in peak season when we are dehydrating mushrooms and herbs. Quiet, easy to use and very efficient! Fantastic product and well worth the money! Avoid wasting your $$ on other dehydrators!

Excellent achat!
Achat de rêve! Je ne peux plus m'en passer. J'ai déshydraté une grande partie de mes récoltes et de mes fines-herbe a la fin de l'été. Je suis entièrement satisfaite.

health hazard
I received this product, noticing that the trays fit very tightly in the shelves. My partner mentioned right away that he would be concerned that the metal and coating could be scraped off of the walls when pushing/pulling the trays in and out. After my first batch of food, I noticed he was right, that the racks were scraping the coating and metal off of the inside walls of the unit. Very disappointed. The manufacturer's affiliated company (the Legacy Companies), mentioned they have not heard of this issue before, though I am not willing to risk the effort to try another unit.I was also disappointed to see that the fan for this unit is plastic. Cheap. The user manual mentioned to off-gas the machine for 30 minutes. I had the dehydrator running outside for 10+ hours before the chemical off-gassing mostly dissipated. We have a commercial dehydrator by a different brand that has all stainless steel components and does not create any metal scraping in the use of the product. Please let me know if you notice similar shards and scraping where the trays contact the walls of the dehydrator. I would like to know if this is a widespread issue. This is a major health concern.

Very efficient.
I like it...use it...glad for the open wire racks so air flow is effective. I can program it for temperature...time limit...and no worry...maybe need a bell notation when finished.
