My New Favorite Pan!
I had hoped this would be what I had in mind, and my expectations were exceeded. Excellent quality, holds up perfectly in the dishwasher, and daily use. Thin metal as you would expect for the use, so you can't use this for frying up everything, but it's beyond ideal for soups and broths and sauces and anything of the sort. So much better than typical pans, quicker and more even with cooking. Beautiful too, aesthetically great. Cleans like new every time, and makes cooking easier; the price is shocking considering the high value. Maybe I'm overstating it. Maybe I just like miso soup.

Every Japanese (should) own this
Living up in Japan as a kid I always saw TV drama and movie moms cooking with this but our household never had it. Ironically I decided to buy it once I moved to Japan.This is perfect for anything involving boiling, simmering, or glazing. I didn't realize how much time I'd wasted waiting for water to boil. It conducts heat very well.It's not meant to be used for sauteing, although it works well if you want to saute a bit before adding water to deglaze it.I'm left-handed so having the notch on both sides is a big plus.My only regret is that I didn't buy it sooner.

1. Lightweight2. High quality steel pan and wooden handle3. Heats foods *extremely* fast. So fast that depending what you're cooking/heating up, it's best used on medium heat or risk burning/overcooking food.
