MatferBourgeat Exopan Fluted Tart and Quiche Pan with Removable Bottom, 9 1/2" Diameter, Dark Gray

Bought this because it’s ATK recommended and made their cranberry curd tart in it. Great browning on the crust. Effortless release of the tart from the pan. Super easy to clean.

First of all we had non of the scratch issues others reported about, ours came absolutely pristine with an easy to remove sticker and we first cleaned it.We used this tart pan to make a quiche following a recipe from "The New Essentials of French Cooking" by Melissa Clark which recommends this kind of pan out of metal with a removable bottom.One trick after we buttered the form (before adding the rolled out dough) was to put it buttered for 5 minutes in the freezer so the butter becomes hard and forms a rough surface. This way the slippery non stick surface doesn't cause any issues when shaping the dough in it.The quiche backed great and was easy to remove. We did NOT cut it on the metal button, rather slided the quiche on a wooden board to serve. This product works well and is worth every cent. We ordered a second one to be able to make enough for more people.

Tarts bake evenly and release easily

I have made a few items in this pan and have been very pleased with the results. I wish it was a bit deeper so I could use it with more recipes. I did not have any of the scratching issues others have written about. My pan arrived in perfect condition.

As stated by others, my pan arrived a little bit scratched. No deep gouges, but a couple that catch my fingernail. Also has a less-than perfectly flat bottom and a couple of jagged metal edges that I flattened with a couple taps from a hammer and sanded down with emery cloth. Not the best quality out of the box.That said, the non-stick is supposed to be PFOA free so it should be non-toxic. I easily bent the edges back for perfect flatness, and in use, this pan works just fine. Nonstick as stated, and my tart came out a perfect golden brown.Also, I went for a “used-very good condition” for $13 shipped, so less than half of full price, and still $7 less than the next-best rated tart pan from ATK.

Half a dozen tarts later and the pan is working just as it should. Tart crusts are releasing well. Getting GBD color on the crusts. Very happy with purchase.

I'll never know how well the tart holds up because it was already dented and scratched when I received it. It was packed only in a thin white plastic envelope, without any padding to protect it at all!Sloppiness does not pay. I found a great alternate product for $10.46 on Amazon that arrived very well-protected and shaped. That pan worked well and is a RISCH product. It's a deeper tart pan, so beware of the size differences.

Perfect for the tart I made. Bottom lifted out easily and nothing stuck to the pan. I’ve only been buying the items that received the highest rating from America’s Test Kitchen, and this was the one they picked.

I bought this tart pan for some specialized baking on the recommendation from ATK. I made a Tequila Lime Tart as a treat for my daughter and she loved it. I'm going to make her another for Mother's Day.

Completely non-stick, cleans super easily. I'm now addicted to making tarts.

Ordered twice, and it was scratched both times. It looks like its good quality otherwise, but hard to justify spending $35 on a scratched pan. I think the manufacturer needs to protect these better. Very disappointed.Update: Amazon offered a 25% refund on one of them. Decided to keep it and see how it performs. Hoping that the scratches aren't too deep and the nonstick ability isn't lost. Will update this review if I'm happy with the performance.
