Are the 8 discs included?

Yes, discs are included. Great product. But be sure to follow the instructions. If you do follow them you will be very successful at making pasta.

Does it work well with gluten free flour?

It should work fine, once you figure out the proper water to flour ratio that will extrude through the machine. The instruction manual has a guide for different types of flours and these ratios, however they don't specifically mention GF flour. With trial and error, you'll figure out what works.
