Does it have a screw to take it apart?

There is a single, small Phillips screw on the underside. We don't know if it allows easy disassembly, since we haven't tried. But it seems likely that it holds the blade in place, and would also release the bottom half of the handle, which would - in turn - allow taking it apart. This screw is visible in the product image that shows four differently-colored units. It's also visible at 0:40 mark of the product video.

Has anyone used this for removing staples off a bulletin board?

I am a teacher, and that is exactly what I use this remover for. It’s great!!

Does it work with 2-5 pages?

Definitely! I use it for even larger some times. Just have to work it a little harder.
