## Questions & Answers

**Q: Best way to use**
A: There are instructions which you can use or which you can ignore as I do, I mix the masala with yogurt and lemon juice to my own taste and it works fine for me. I use it for a restaurant that I have in Philippines and so far no complaints about the tandoory that we occasionally serve. One point that I would make is that the colour of the mix is very pale and nothing like the red or orange usually seen in UK Indian restaurants kebabs so I do add food colour either red or orange.

**Q: How much spice mix do I use for 600g of chicken fillets - in a little yoghurt?**
A: I used 3 good tablespoons in to 400g of yogurt for about 15 skinned and slashed chicken drumsticks, was really good,
I followed Chef Simon Hopkinson recipe, delicious 😋

**Q: can i use it in curry?  It says "barbeque" so not sure....**
A: We use it as a marinade with yogurt- but as it's basically a mix of spices it might be ok in a curry?

**Q: Is trs tandoori masala mix gluten free? cooking for coeliac friend who cannot eat any gluten.**

My Bengali friend taught me how to use this powder. I mix it with yoghurt, garlic and ginger paste, a bit of lemon juice and some fresh coriander. I leave to marinade overnight and then cook on the bbq or in the air fryer. It’s a strong spice, so a little goes a long way. The powder is very expensive on Amazon, but as I can’t find it anywhere else, I have to buy it on here.
