Does this have a uk plug?

Mine arrived with a US plug. You will need a US-to-UK plug adaptor. I order one from Amazon for £12.99 (it was a twin pack)

Would these stamps be suitable to impress into metal clay? The depth looks quite shallow, is this adjustable? Thanks

I don't feel as though the depth of these will be suitable for what you need, your looking at a 1/3 mm depth if that.

Do the Mint inks work with embossing powder?

I haven't tried it but I don't see why not you might need to be quick if the ink dries quickly

Would this work in the UK ?
