how easy is the silicone lip lifted up as my son had a nuby 360 cup and soon figured out if he lifted the lip he could pore his drink out?

Not easy my son is a sneak who loves to spill everything everywhere and he hasnt managed with this one :) in fact you need to clean under lip with a q-tip its tight

Yes Munchkin do a metal one for hot drinks, I use it.... It works well

Does the outside of this get hot in the sun? Looking to take one to Jamaica but don’t want it to burn my son.

I live in Scotland so this isn't really an issue for me. However, I have the steel one illustrated and if you put it in full sun it will obviously get hot. Put it under a towel or in the shade and it won't get hot enough to burn anybody.

Does it come with the lid cover?

No the 360 cups do not come with lids in the UK or EU.
