What are the differences between this and Arkham horror?

Eldritch horror is a much shorter game for starters at only 2 hours. Also eldritch is much easier to learn, it is similar to pandemic in that you travel the world fighting monsters and closing dimensional gates. Arkham is set in just one city. I consider eldritch to be the better more playable game.

Are expansion packs interchangeable with Arkham Horror ( I know they are very similar and by the same company...)

No. These are completely different games and work using different game mechanics. Eldritch Horror was designed as an easier-to-understand version of Arkham Horror.

What's the replayability like?

I find to be very good. There are four main stories and the deck's and size of the game give a lot of variability. It's also difficult, so don't expect to win every time.
