Why does this have a milk product in it?

It has the milk of coconut in it not dairy milk.

Does it dissolve in cool water?

No, you will get little white floating balls of what I presume are coconut fat balls. I only use a coulee of spoonfuls in coffee- but what works for me is to dissolve in about 2 oz of hot water in the coffee cup, stir for a bit, then run the Keurig. this results in much fewer fat floaters.

1 scoop ( 2 Tlbspn) is 60 servings for the 2 LB size

Is this good to use to make coconut yogurt?

I see no reason it can't be used for yogurt. I put a small amount In ice cream. But the label on the jar states:This is intended to be used only by healthy individuals 18 years of age or older. Consult your physician if you are pregnant or nursing. Consult your physician if you are taking any medication or have any medical condition. Do not exceed recommended use.
