Anyone know if the Atlantis version of this 3.5qt really is any better? It seem to be actually lighter....? Thanks.

I have both. The Atlantis is a bit heavier and I like the way the handle is set better. But, that said both pans performed flawlessly. They heat evenly and quickly and hold heat well. They both sear evenly. I probably prefer the Atlantis version as I have just about everything Demeyere makes in the Atlantis line. I bought the 5 Plus for our vacation home. The 5 Plus does not have the copper layer that the Atlantis has.

how deep is this pan?

The pan is exactly 4in deep. I just measured it. BTW.. I did not originally plan to buy this pan but saw it on sale. Turns out I use it more than all others.. Good for a small meal.. Or a pretty good sized soup or stew. It's my favorite pot!

Completely new to a saucier. What do people use them for? can a homemade tomato sauce simmer in it for awhile? rice? thick sauces like afredo?

Sauces are the intended use for a saucier, the curved sides allow for easy whisking and stirring, you'll have no problem simmering a tomato sauce for hours or making thicker sauces sauces like Alfredo. Also great for soups, stews, searing chunks of meats, risottos, rice, saute's, stir-frys, boiling pasta - it's pretty versatile at 3.5qt.
