Q: This knife look beautiful. What is this knife design for? I am looking a knife to cut chicken bones.

This knife is heavy and has a thick blade. However, I would probably look for a clever to cut through chicken bones. If your looking for a knife to break down whole chicken's, I would not use this knife either, it is to large and wide. This knife is perfect for slicing large beef and pork roasts. It's also nice for separating ribs. I also used this knife this Thanksgiving for slicing up the smoked turkeys I did for family.

Q: does this knife come with a blade guard

I purchased the knife, and live it! It comes with a simple flimsy plastic blade guard. Honestly though all good knives never come with a guard. It is a custom thing.. I have 3rd generation master blacksmiths sho make me knives for fish, and they are sent with the name of the blacksmith on the knife and that's it! This knife is excellent for day to day butchery of ribeyes/strips!

Q: What type of steel is the blade made of and what is the Rockwell Hardness rating?

Stainless with rockwell hardness of 55-56

Q: would i be buying the knife or the handle

Buying the knife and handle, all one piece. Great knife!
