... If you want a knife that's been folded by a Samurai warrior 150 times and bathed in Saki, or if you want a showpiece to brag to your mates about over whisky and a cigar. This knife is definitely not for you.But, if you need a knife that will do its intended job, sharpens easily, won't rust and in my case is totally reliable then this might just be for you.I'm a fish and chip shop owner and quite unusually I fillet about 95% of my fish. 6 days a week. 52 weeks of the year. I've used all makes and qualities of knives yet the ones I come back to time after time are the Victorinox filleting knives. Proper working tools.I only recently discovered this curved filleting knife and find, for me, it's better then the straight filleting knives. Not sure why, it just feels easier to work with.I probably fillet around 300/400kg of different fish per week, usually haddock but also lemon sole, cod, hake etc and this knife just does the job. Brilliantly.For its price, for me and my job, its the best.

Perfect for brisket
Doesn’t look sharp at first glance but don’t be fooled this knife is the business. I use for removing excess fat from briskets and beef ribs. Be careful how you store this, due to its curved shape I accidentally sliced my finger when reaching into the drawer for something.

Good knife but you'll need a sharpener
This is a very good knife with just the right amount of flexibility. It isn't razor sharp on receipt though, so you'l need a good sharpener and know how to use it.

Awesome little knife
Bought this to butcher game at home and it certainly does the job! It gets through skin, meat and bone with ease while being small.enough to accurately get into tight spots on a partridge. A great little addition to my kitchen!
