Wat did you use to cut this foam to the size and shape you needed?

A large serrated knife. For a clean cut pull the knife towards you in one direction. Don't saw it or you will make a big mess and the cuts won't be clean. There are videos on YouTube as well.

Is this the right thickness for a backrest on a built-in bench in a kitchen?

I used this foam for back cushions on our Adirondack chairs and it’s been very satisfactory for that treatment. I imagine it would be similar for your kitchen bench. Best of luck!
