Worth every penny
The sheer wealth of quality recipes in this book is mind-blowing. These are professional recipes. It also has enough theory to actually learn and understand why you doing what and gives readers the tools to develop their own recipes. What's really great is that the recipes come with shelf lifes. Like chocolate ganache 3 different ways with different shelf lives. This book contains knowledge of a lifetime of making chocolates.

The bible for chocolate makers. Not just a compilation of the earlier books, but a revision by the author.Chapter after chapter of basic technique and foundation recipes; and a large number of interesting and flavourful more advanced recipes.Written with the professional chef in mind, so some home cooks may find they don't have all the required ingredients; and the recipes talk as much about shelf life and similar issues as they do about technique.There are unfortunately some proofreading errors at various points - and the index has many omissions.

To die for
If you are really serious about chocolate, look no further. There are so many amazing recipes for truffles, pralines and other chocolate delights. The book is not for beginners, and its price reflects the "professional" side of the book.
