Anyone have a link to the Data Sheet or maybe just a pinout diagram?

I'm not aware of an available data sheet. The pins on the long edge of the board align with those on the 1602 display, straight across. The four pins on one end are labeled, one each for power and ground and two for the I2C connections to the Arduino. The jumper at the opposite end enables/disables the backlight LED

I prefer writing my own device drivers (i work in c / asm). where can i get the datasheet pdf for this device?

Are the headers pre-soldered?

Yes, short male header pins. They go through the LCD PCB and just clear the back of the LCD screen. Clip off header pins flush after soldering. IF you need to remove the original pins, heat the short header pin stub and slide out as the solder becomes liquid. The header black base will melt away. Solder-wick the remaining holes.

How do I obtain the schematic and datasheet for this product?

I have not been able to find one.
