Sturdy enough to use with a steak

These are better than the really useless, flexible light duty kind. But also not quite as rigid as the Dixie brand heavy duty I have been using. Shipping was fast & I specifically wanted the 3 piece variety set to see if I'd like them. But after this I think I would go back to Dixie.
