What is the best way to store an opened bag without a basement or cool area (live in south)?

IT MUST BE STORED COOL, DRY, AND IN THE DARK. I put a month's worth of whest in a vacuum freezer bag, vacuum seal it with an Amazon oxygen absorber pack, to keep it from going rancid (from the natural oils in the berries) AND a moisture absorber, to help it stay dry. Alternatively, use a small piece of cloth or a pouch of UNTREATED (no oil coating on the steel wool to reduce rusting) FINE 000 gauge steel wool inside the bag, will help remove the moisture (by rusting) & remove oxygen too, (by rusting as well). I remove the cloth pouch of steel wool when I unsealed the bag, and discard it, after inspecting it to see how much oxygen and moisture it "absorbed" by rusting.
 COOL, DARK, NO AIR, AND DRY, and your wheat berries can last for over a decade. I've heard of people keeping unground grains for decades this way.

can you use this product to make biscuits, cakes, cookies, pie crusts

The product we received is raw, unground wheat seeds / "berries".  To obtain flour, it has to be ground.  We use a "Wonder Mill" to do that.  We use a bread recipe and process we found on-line to make sandwich loaves that rise like bread you buy in a supermarket but which are made with 100% flour milled from this product along with an optional tablespoon per loaf of active wheat gluten (protein).  Have not tried making biscuits, cakes, cookies, and/or pie crusts yet from the flour we make from the Great River product.

Are the wheat berries washed ??

I doubt they are washed.  They are very clean though... I mill them to flour straight from the bag.   There's very little "fines" or dust.

Has anyone ground this wheat and then used in bread machine?

I make 2-3 7Lb batches of bread a week with this wheat in a conventional oven. I use a 3:1 wheat to white four ratio and it works very well.
