When heated to shrink, does it actually shrink and melt to the point where it grabs on the material it is being applied to? (Melt)?

Yes, for my use it worked well. It would have worked better if it had thicker walls for strength. For sealing it shrinks very well.

What are you using to heat up tubing?

I've used a butane lighter (can leave soot marks), a standard heat gun (can be imprecise & too hot), and now I use a 300w heat shrink gun (not too hot & only heats a small area).

You use a heat source suck as lighter or heat gun to shoe I the tube to the wire. Pass the heat over not against the tube

I need heat shrink for underwater connections n a water well? Any suggestions on what kind of shrink wrap I need ?

Just a suggestion: use heat shrink as normal, but cover that in either paint on or wrapped on black vinyl (butyl, or whatever) to give a truly watertight connection. It's the same stuff as electrical tape, but comes in a can with a little brush, or HV insulation, but that would give a very high diameter. I like the brush-on stuff for lower voltages, and would definitely make for a watertight seal.
