Is the item quantity three per the description (3-gallons)?

There's a selection box next to the item description where you choose a quantity. The 3 gal case actually cost almost twice what 3 individual gallons cost as of this writing. [ $13 for 1ga($39)l vs $64 for the 3gal unit case]

Is good for a 91 mustang 5.0

The Valvoline DEXRON/MERCON Automatic Transmission Fluid - 1gal (773636) will be the closest product we offer to the original fluid specifications for this Mustang. However, Ford now recommends using the Mercon V, even in a vehicle of this age. We recommend using the Valvoline MERCON V Automatic Transmission Fluid - 1qt (Case of 6) (822345-6PK) to meet the current manufacturer specifications.

Does anyone recommend going to synthetic for my 1986 toyota ps unit?

I wouldn't go synthetic in a 34 year old system. If you're serious about doing it right I suggest cleaning the hoses THOROUGHLY then keep an eye on them. Replace any leaking hoses at this time.

This is Dex 3.

The store will try to sell you Dex 6. It's not the same. DEX 6 is to thin and can't hold heat

Best price on great product

This is the best price I found anywhere for Valvoline transmission fluid. When you are filling a newly rebuilt transmission that takes 11 quarts, price does matter!
