The temperature range is listed as "range: 0¡ãc 1024¡ãc," what is this? i am looking for some that can measrue up to 1000 c.

As the data sheet said for this, the converter allows readings as high as +1024°C, and exhibits thermocouple accuracy of 8LSBs for temperatures ranging from 0°C to +700°C. The output is given in a 12 bit, digital number. In the electrical characteristics, there is a Temperature error for range from +700°C to 1000°C, you should check that as well. Will this screw probe create a watertight seal?

It might if you are careful. The front end seems solid and water proof. The back end (where the wires come out) is not water proof. I am assuming that the front end will be in water. If you were to use a couple of rubbery washers as gaskets, you could keep the back end dry and happy. Personally, I put a plastic sheet around the whole thing.

Are these submersible in water? I have two in a bath, averaging the temperature but I am getting wrong readings as opposed to when they are in the air

The sensor is not waterproof (the wires under the mesh are not covered in any plastics).

From the transmitter temperature range is 0°c - 1024°c, but it's not clear what the temperature range is for the k-type thermocouple. please confirm.
