Q: How would this be in a travel trailer going down the road?

I ended up returning it because even the slightest weight in the pockets made them lean out. Perhaps if you could secure it from the back it would be okay. Not the best overall.

Q: do the pockets fold back in easily when transporting?

It is very easy to fold back, can be done in 20 seconds. And the folded size is very compact roughly in 15’’ x 10’’ x 5’’
