**Q: What kind of vinegar? If it is white/distilled vinegar, is wheat grain/gluten used in the process?**
A: The term "vinegar" used alone on US labels refers to distilled white vinegar.  Most US distilled vinegar is made from corn.  Being distilled, regardless of the grain, would render it safe for those with Celiac disease.  The offending protein in the gluten of wheat does not transfer in the distillation process.

I was a little surprised with how difficult it is to find a good plum sauce. The majority of the ones I've found have very little actual plums in them, some are basically a slightly sweeter than normal ketchup with a smidge of plum juice. But not this one, its made mostly from plums and has a great plum flavor, just the right level of sweetness. I use it mainly for dipping lumpia, but its great for anything you'd use a plum sauce for.
