Low SODIUM, high in MINERALS, huge on taste, but...
The "but" is because I cooked mine about 7 minutes, at a rolling boil. The package said 2 minutes, but because I read the reviews, I checked mine at 5 minutes, and it still was not done to my satisfaction. The 7 minute mark was perfect for me.I tend to stay away from soy products, but this one is a winner; the taste was superb! I cooked up the Yellow Soybean Ribbon Pasta variety. Just arrived yesterday, and made my meal last night.Check out the nutritional information - it is loaded with minerals, and zero sodium. I had my Mezzetta Garlic sauce nice and hot in another pot, and mixed the pasta in, added Parmesan cheese, and enjoyed every single bite!

Firm, chewy texture but good flavor
This gluten free pasta is surprisingly good! i wasn't really sure what to expect, but some of the gluten free foods i've tried have not been good at all. Once cooked these tight little pasta rolls open up into a flat noodle similar to egg noodles. They are extremely easy to cook, the 2 minutes was right on for creating al dente pasta.The texture is a little different than regular pasta, but not bad. It's a little firmer, chewier and heartier. i cooked up the pasta and created a creamy mushroom sauce and this dish felt 'meaty' even though it was vegetarian. It just felt like a very hearty pasta dish. There is a lot of chew to it.So far i've only tried the edamame, but i thought the flavor was fine. It's very mild and my sauce overpowered it so i didn't even notice it in the dish. The only ingredient listed is organic green soy bean, which is pretty amazing. These are a great pasta alternative for anyone who is gluten free. i love that they are organic and vegetarian friendly. The nutrition info is good too, these contain 25grams of protein per serving and high fiber and iron!This comes with 3 boxes, each one made with a different ingredient (edamame, yellow soy and black soy). Each box has 4 servings. Price is high for regular pasta, but for a gluten free, low carb and high protein pasta it's really not too bad. The boxes are small, but the pasta cooks up much bigger than i expected, so the servings are probably pretty good. i just tossed in a handful of pasta when i made my dish and i was very surprised how much it made. i look forward to trying the other varieties.

green definitely tastes like soy
I believe these were all supposed to be the same, just plain soy pasta in a variety of colors. The green one though, tasted more of soy than any of the others and the yellow seemed to taste the closest to regular pasta. All are good though, but if you are sensitive to the taste of soy I would steer clear. Also, one box isn't much, it definitely went feed my guy and me, we're gonna have to use a couple.

Pretty Tasty For Soy Pasta
This was my first time trying soy pasta and I wasn't sure what to expect, but it turned out to be quite tasty and easy to make. You get 3 boxes of pasta in this bundle, black soy, yellow soy, and edamame, all of which are ribbon shaped. They are small and scrunched up before you cook them, but expand into long wide noodles once boiled, similar to fettuccine noodles just double the width.The texture is pretty close to that of regular pasta, maybe a little bit more grainy. The box says you only need to cook it for two minutes, but I did mine for 5 minutes and it came out delicious. I usually make whole wheat pasta, and I have to say the taste is pretty close to each other.I prepared it with my special recipe tomato sauce, mozzarella and parmesan cheese, and it only took around 20 minutes to prepare this meal and that includes boiling the water and preparing the sauce.

I like it!
I had never tried ribbon cut pasta before. I made chicken and noodles with this and it turned out great. It's got a different texture than most pasta that I'm used to. A little chewy, but not rubbery....like meat almost. It's hard to describe. Something you have to experience to understand. That said, it really was delicious mixed with sauce, chicken, and veggies!

Interesting flavor and texture
I have lived in Italy for several years and love traditional semolina and egg pasta. I had eaten whole wheat pasta and did not care for it, so I was a little apprehensive about soy pasta. My daughter and I tried the edamame box first because we both love edamame. I made two different sauces with it, artichoke and tomato. I'm afraid to say that I did not care for the pasta, I simply could not get past the soy smell when it was boiling and the texture after it was cooked. On the other hand my daughter actually liked it. She ate all the pasta we cooked with the tomato sauce since she did not care for artichoke. My son would probably like this too since he eats a lot of organic and vegan food. It is a personal taste; also, I like the fact that these pasta offer more options for those who are vegans and/or cannot tolerate gluten.

Tasty and filling
So far I have cooked the black noodles and they were tasty! I was skeptical of the box’s claim that they only need 2 minutes in boiling water to reach al dente texture, but it’s true. We ate them with marinara sauce, cheese, and garlic as a pasta substitute and they were great for that purpose.The ribbons “unfold” as they cook so it makes more pasta than you might be expecting!I went back for a second bowl out of habit and realized as I started taking a bite that I was actually pretty full. Protein at work =)$19 for the set of three boxes/colors is perhaps a little more than I would normally spend, but this is still a great buy for anyone looking for gluten free, high protein, and/or low carb noodles.

Easy to make, tastes decent
These cooked well. They do have a decent taste to them, I believe it is all in how you prepare them and what sauce/meat/ingredients you mix. If it is a lighter tasting mix you can definitely taste the flavor of the "pasta" which isn't bad but a bit strong.
