Absolutely! We do that all the time. Just store them in a cool, dry place and they'll be good to go for next year!

if I am planting my houseplants in them do I have to wait for the roots to start growing before I put them in soil or can I directly put them in soil?

I have only used the Cowpots to grow vegetables from seed. When vegetables are ready to be put in ground, I put the cowpots (veggies still inside container) directly in soil. The cowpots have always disintegrated over time and vegetables have done well.
