Extrem scharf ,sehr handlich. Einfach wieder mal beste Victorinox Qualität. Seid längerem mehrfach in der Küche in Nutzung. Hält ziemlich lange die Schärfe. Und das nachschärfen ist mit dem richtigen Schleifwerk sehr leicht.
