Does it support the keyboard enough to allow typing on an economy flight fold-down table where the keyboard would hang in the air slightly?

Only an opinion as not used on flight fold-down table, but if the overhang is no more than or just slightly more than the depth of the front flap at the top in picture, it should be ok for typing. Only it can hang down, the keyboard will be supported by the rest.

Will this fit a new Surface Pro 8? I guess it’s a question of the cut outs for the ports etc.?

I don't believe it will. The on/off and volume control buttons are on the side and not on the top as in the Pro 7. Also I believe the Pro 8 is marginally different in overall size to the Pro 7 I would expect that Omnipak will provide a suitable case cover for the Pro 8 sometime.

The Pro 7 & Pro 8 require different cases as the ports and the switches are in different places. The overall size is the same for both cases Yes, it will stand without keyboard. There are vents all along the top visible when flap is open and smaller ones on the two sides.
