Chickpea texture most like real pasta!
Nothing is true semolina pasta but chickpea pasta is the closest I've found. I've searched for a pasta substitute that was low in carbs and great on semolina pasta taste and chickpea hits the mark on both counts!!

Healthy, So What!
As a diabetic, this product seemed like the answer for "allowed" pasta. Unfortunately it's not the answer because:1. Made minor difference in reducing total carb numbers.2. Does not taste good.Unfortunately I bought a case, so I am gifting to other diabetics who may be curious, although I am telling them that it lacks flavor. 😐

Texture is good as long as you watch the cook time and test frequently
We love the low carb and high fiber of this pasta. The nutritional profile is perfect for us. We liked the taste, but it does have a strong veggie flavor. The color is grey white instead of creamy white like gluten pasta. We paired it with traditional marinara to good effect.

Texture is off
Having to go on a grain-free diet, was missing pasta. Tried this as an alternative, but the texture is off. Too crumbly. Wish I liked it better.

Set a timer
We are gluten free because of sensitivities so we don't buy these things because we want to we buy them because we have to. The good thing is gluten-free has come a long way then when I first found out I couldn't have it. There was nothing back then for options and I basically just had to suffer while everyone else ate what I wanted. Gluten-free pasta is hit and miss. And it's all up to each person what they find appealing and what tastes good and it doesn't necessarily mean it's a bad product. The main rule with gluten-free pasta is you need to set a timer or you're most likely going to be disappointed. If you cook it just a minute over it can turn to mush. If you take it out too soon it can be super hard. It's trial and error. Cooking this at exactly 7 minutes It didn't fall apart and was pretty firm. It was so firm that it would probably only taste good in certain situations like drenched in a white or red sauce. When I first ate it I used a light sauce and because it was so thick it wasn't that great due to the firmness so I knew it would be happier in heavy sauce to hide the fact that you're not eating real pasta. It might be good in a pepperoni and vinegar pasta salad, but I don't have supplies to try it out (as long as it is drenched in a vinaigrette). These are definitely better than the ones made with lentils. My taste buds do not like that strong taste with those. If you keep it right at 7 minutes you could do quite a bit with these types without them breaking apart and turning to mush. Always read the directions on these alternative types of noodles as they are not like regular ones. You don't want to have to throw away an entire box because you forgot about the pretend noodles on the stove. I have tried the long spaghetti noodles of this brand as well as the short ones. I don't have a preference as I felt the same experience with both. I used the long spaghetti noodles and added albacore tuna, salt and butter. It's an interesting mix I like to make sometimes. I still feel it needs to be drenched in a sauce to be okay with it. You also need to remember you are eating vegetables so don't try to make it into an actual pasta when it's still a vegetable..
