Will this mate up to a gray anderson sb175 connector?

No. Anderson connectors are color coded and only same color fits eatch other. This Red will only connect to another Red.

In the kit I received, the contacts are covered with a white coating, especially inside the barrel where the wire end goes. Is this normal ?

Anderson wire contacts can be crimped or soldered. Don't think you bought these from us so I can't say for sure what you refer to as being inside the connector. Sometimes the wire contacts may develop a white appearance which can be caused by oxidation.
