Q: what is the thickness of the pastry mat?

No idea, perhaps no more than 1/8 inch

Q: Will it lay perfectly flat after being rolled for storage? Or do you end up having to find heavy things to weight the edges to get it to lay flat?

After every use, I wipe it off til clean, let it dry, roll it up, and replace in original plastic rectangular tubing. When ready to use, I remove it, unroll, and put in on my granite counter, where it lies perfectly flat. No problem with edges at all.

Q: Can this mat be used in the oven? If so, what is the max temperature?

I have the silpat macaron mat, I use it at 350 F with no problems at all my mat still looks like new but I’m not sure what is the maximum temperature you can use it.

Q: How do I cut pastry for a pie crust without damaging the Silpat?

I would not recommend that you use a knife on the mat. I think you could use a roller type cutter. The mat is pretty durable, but I don’t think it would be in good condition if you use a knife.
