Q: What is the diameter of the bottom of the pan?

12 inch diameter at bottom, 2 3/8 in deep flares to about 15 inches. Love it. use it on y grill as well as in the oven. Not so hot on top of stove.

Q: What is the difference between the paella and round frying pans beside the handles?

The proper answer is this is made specifically for paella. It has a wide bottom and low sides needed to make a paella. The handles make it easier to turn on the oven or a grill to acquire even cooking, whiling the vertical direction of the handles keep handles (and your hands) from getting to close to the heat or banging on the sides of a hooded grill. While, yes, you could cook other items, such as fish, or meat or a bunch of eggs in this pan, or any pan you may decide to use, this is designed in thickness, shape and material specifically for paella.

Q: What are the diameters of these pans at their widest point (handle to handle)?

Outside handle to handle is 17 1/8" on mine.

Q: How hard do you need to scrub to get off factory coating? . I have washed it well but saw no coating come off. Don’t want to mess up my pan.

On a smaller Matfer pan, I left it on a full gas burner until it turned white hot. That burned off the waxy ceramic coating used to keep the pan from rusting after shipping from the factory (which I'm pretty sure is in Germany). On this large a pan however, I have read people have success putting it in the oven when they put the oven on the CLEAN cycle. PS a lot of people never actualliy remove the shipping coating and complain the pan isn't at all nonstick... well HELLO, you never removed that coating.
