Q: What is the Shelf Life

The boxes I bought last week are good for 6 months.

Q: I what is the shape of this pasta?

It's not really a pasta--it's freeze dried spaghetti squash and once you boil it - it take the shape of spaghetti squash as if you had baked it--it's exactly the same as far as I am concerned and only takes like 5 minutes to make! So much easier!

Q: Is it dehydrated so that it remains raw? If not, at what temperature is it gently dried?

I believe it was dehydrated raw, but I can't suggest buying it since within 1 week of receiving it the spaghetti squash turned brown. I threw it out since there was no way I was going to eat it. I bought 3 boxes and they all did the same thing, so I don' think it was lousy packaging.
