So happy to find this product! I have been doing gluten free baking for some time and now my husband needs a low sodium diet, so this product is really a life-saver! Worked great. I wrote on the lid with a marker USE 2x UNLESS SPeCIFIeD so that in the middle of baking I don’t have to squint at the small print to read the directions! Many recipes I have found call for this product by brand name. Hope you are as pleased with it as I am!

good substitute for baking soda
my husband needs to control this salt intake and I love to bake so this is a great product for me to use to bake with and help him control the salt intake. You do have to use double the amount as you would using regular baking soda.

Health improvement
This is not a review for using the baking soda for baking. I have hiatus hernia with the accompanying fiery esophagus and chest pain. My medication (Omeprazole) dose is at its highest limit and was not doing the job. I tried another medication (Protonix) and it had horrific side effects for me.I sought help from hiatus hernia sufferers online, and there were two kinds of suggestions for soothing the acid in the digestive system. One was vinegar and water (too harsh) and one was baking soda and water.Since I was concerned about the sodium in regular baking soda, I sought medical advice. Information about the availability of your product was given to me. Hooray! It is working. 1/2 teaspoon of Ener-G Improved Baking Soda Substitute, Sodium Free in water -- 3 times a day -- has eliminated the fire in my esophagus and the pains in my chest. No discernable taste and smooth, practically non-discernable texture. I add a tiny squirt of MIO (Liquid Water Enhancer). Although I'm hoping to eventually wean myself off of the Omeprazole, I am sure that the Ener-G Improved Baking Soda Substitute will be always be available in my cabinet.I was telling my son yesterday that I'm going to give him some to try for his acid indigestion (especially at night). If it works for him, I will be buying some from you to give to him.I am so grateful for this product. I am also going to tell my neighbors about this, since they are on a restricted sodium diet.

Doesn’t rise well
I was hoping this would be a good brand to use for baking, but it isn’t. First, my baked goods don’t rise well even though you must double the amount called for in the recipe. It , also, clumps so takes more work to get it mixed in well.

I bought this because it was recommended in a well-reviewed, low/no salt cookbook. I wanted to be able to make cookies and baked products for my boyfriend who has extremely sensitive blood pressure issues.The cookies didn't taste like thicker, robust Tollhouse homemade but were good. The texture was more like soft-batch and almost have an additional hint of a fruity flavor behind the chocolate in the cookie. I made the recipe otherwise the same--so it is a true substitute. The chocolate chip cookies set up, were flatter than those that use baking soda, but were more like soft-batch cookie texture. Boyfriend and kids finished them all in a day and has asked me to make them several times.My dad is a fabulous candy maker and used this substitute in some peanut brittle for my boyfriend. There was a marked difference in the thickness between the 40-year recipe that dad uses baking soda in and this substitute. The brittle still set up and became hard, the thickness was half it's normal height and the airiness of the brittle was is not quite the same. The candy decent and something he could eat. I have bought and reordered this product.

Disappointed
Unfortunately my wife, the baker in our family, did not find it provided the best substitute.Our son has recently had a heart operation and before, plus now, was told to keep his salt intake to a very small amount. We hoped this product would replace the need for salt and things like baking soda allowing him to enjoy an occasional cake/scone.

It is good for low sodium diets, but you need twice as much as baking soda. I found it didn't rise as much and left an aftertaste

Does the job but not cheap.
Not cheap but a must have for people with kidney problems who must lower their sodium intake.
