Can i use any oil or water instead?

Yes you can use oil I use oil everyday as a chef and have had this stone for over a year and it's sharpens all knifes in my kitchen

Can this blade be used to sharpen straight razors?

The question specifically regards sharpening, you can sharpen a straight razor with a 6000 grit stone. But you would need to follow that with a grit of 10,000 or more with leather strop which moves you into polishing the edge vs. sharpening.

Can this be used to sharpen wood lathe chisels?

Yes, We recommend using flat blade chisels.
