I make big batches of chicken cutlets once a week to have throughout the week and since I bought them they have changed the game. I use one for my egg wash and one for the breadcrumbs. They are the perfect size for such a task. Also great for roasting veggies, baking potatoes etc. instead of using my full size baking sheets. They are heavy duty, not flimsy at all, wash up beautifully, no sticking, just all around great quality. I appreciate that they don't warp in the oven - I've used them with heat as high as 425*. They look very nice and don't appear to get hot or cold spots. The size is as advertised and expected, which is considered a commercial half cookie sheet but is like a full cookie sheet. I can only get two of them in the oven at a time, though, which isn't ideal with the amount of baking we've been doing with our fledgling home baking business, but if it takes off we may get a bigger oven. These don't scratch from using our plastic/resin (I don't know, I've had it for 30 years) spatula, but I would not use metal on it, so I can't say how scratch-resistant it is. I also can't attest to how easy they are to clean, since we use parchment paper when baking on them.
