Why can't this product be made with beats (for color) instead of the cancerous 'sodium nitrate'? Shelf life would be less, but it would be healthier.

Because sodium nitrate is more economic for the manufacturer and it is usually only harmful to certain individuals, such as those on a salt restrictive diet. If you want healthier, buy fresh beef brisket and brine it yourself which will not require a coloring agent at all. Or buy some other product like biltong or jerky that doesn't use sodium at all.

What is the shelf life?

I don't keep mine for longer than 5 years but have eaten some canned corned beef as old as 15 years without any ill effects.
