When you run out of papers can you buy a paper refill?

No, it's not a binder but a fixed sheet notebook, pages are bond like in a book or journal not loose-leaf as say in a refillable planer

Would it hold up in an outside workers pocket that gets wet?

It has, that test it passed. Unfortunately, the pen loop on the one I use broke day 1. An other of the 3pck I purchased didn't have a pocket. The little notebook itself, very durable. It survived many extremes in my pocket at work in a large, unair conditioed shipping warehouse.

What is the paper weight (thickness)?

It is a good quality paper. Thick than newsprint or standard loose leaf paper I would say journal/diary, bot not card stock. I like the quality of these notebooks. This is the third time I have purchase these notebook for my job
