Hey there - acetic acid is the predominant acid in kombucha SCOBY culture. Bacteria in Kombucha culture such as acetobacter consume alcohol produced by the yeasts (which is how acetic acid is created) making this a non-alcoholic drink with only trace alcohol (which we test).
