Great Knife
I just received this knife and have been using it to filet anything I catch in the Florida Keys. Safe handle and very sharp blade make quick work out of cleaning fish. I cut the slabs off each side then I use a long thin filet knife to take the skin off.

strong, sharp knife
We use these knives to fillet fish for several hours at a time. They work great for big fish as well as doing the fine trim. Some of our staff won't use anything else. Stays very sharp for days.

Could be stiffer, but a great all around blade
Awesome for cutting primals into steaks/chops and roasts. Just a little too much flex in the blade for high fat content pieces like whole top sirloin or especially fatty ribeye. Worth keeping around for its versatility though. Great grip on the handle when you're slicked up in blood or fat.
