The steamer insert fits into the stepped portion of the vessel about 1/3 the way up from the bottom to hold foods out of the cooking liquid and can handle all your large capacity steaming needs – for tamales, seafood, pulled pork, pot roast, ribs, and more. The pressure canner achieves the high temperature required for safely processing foods with the USDA endorsing it as the only safe method for canning meats, poultry, and low-acid vegetables. It can also be used as a large pressure cooker for any meal that needs to come together quickly. This Granite Ware pressure cooker preserves flavor and nutrients, tenderizes tough cuts of meat, and cooks many foods in one-third to one-tenth the time compared to traditional methods, and is large enough to create family-sized meals with ease. The unit features a pop-up pressure indicator, locking the lid in place. It cannot be opened while the canner is pressurized, even if there is just one psi of pressure. The vent pipe is located in the center of the lid and if it fails or clogs, there is an additional black capped safety valve set to go off and a second all metal safety valve will exhaust residual pressure while sounding a whistling alarm. The sturdy lid locks in place during canning or cooking with the lid gasket sealing ring forming a pressure tight seal between the body of the canner and the cover during use. Maybe I'll have to get a manufacturer to make them for me.** A: Even though a magnet won't stick to this, you can buy an induction adapter plate which gets used kinda like a coaster for the pot. Instead of the pot getting hot by itself, the adapter gets hot and transfers that heat to the cooker. do a search here for induction adapter. **Q: We have a smooth cooktop and can only use certain pots and pans and am wondering if this is okay to use? My old pressure cooker says not to use it on smooth cooktops so need to find another one that will work.** A: I use mine on my glass cook top. My burners get hot enough. (I use the double size burner which is a perfect fit so it gets plenty of heat all around the bottom-- don't know how much that helps). I am just very careful about moving it as I am with all of my pans.
