The flavor is savory, vegetal, grassy and full on smokey green Hatch chile flavor with subtle but definite heat that builds. So many uses, a few of my favorites: to flavor the masa for tamales; as a flavor booster for chile verde con cerdo; or add to mayo--amazing on fries or any sandwich. Can't do without this one

Got to love it!
This is as close as I can get to New Mexico for delicious hatch Chili's! I just finished making hatch chili pork stew with this spice. I took it to a church social it was the first thing to go on the table, people raved about it. It will be a staple in my cupboard from now on

Good Mild Green
I like to use mild green chile powder in my New Mex food, regardless of the final heat I want. An extra punch of more green chile taste without adding extra heat. This is really good, tastes like green chilies, not like some other pepper. If I were you, I would not buy from the Hatch Chile Store. They sent me medium-hot marked as mild. I called them about it and they were extremely rude.
