Seasonal Earth
This seasoning is amazing for many recipes!This seasoning is comprised of 10 different herbs and seasonings, including some great ones such as Rosemary and Oregano.This seasoning has different flavors in each bite, whether you use a lot or a little, and some bites are very earthy when compared to others. While I don't mind the earthy bites (they're not my favorite), I know that others may think it's more bitter than it should be. Fortunately for my taste palette, I like more bitter foods anyway on a general basis. Just keep in mind that it may not be a consistent flavor in taste in each bite, so for better or worse, it's a mix-up of flavors.This jar is also very large, and even if you use a little too much in your food, there will still be a lot of seasoning left in it. This is definitely a bulk buy, so it is absolutely worth it's price per ounce.Overall, this is a great seasoning mix. It has a wide variety of spices and herbs in the mixture that come to have an earthy and almost bitter taste. And for the size of the jar, you are sure to get your money's worth. I recommend this seasoning to anybody that likes to cook, as this can definitely spice up your normal taste palette.

Sprinkled whole and ground with mortar/pestle
This was fantastic on skin on/bone in chicken thighs. I ground some with a mortar and pestle for the marinade and then also sprinkled some whole on top (looked nice!). Delicious and the container is large. This will last for quite awhile. Note: this seems to be very fennel and lavender forward, but perhaps I should have stirred or shaken it up before using.

Great seasoning, not good cap
I love using Herbes de Provence spice blend on meat. There are a lot on the market that have slightly different blends and prices. The price value on this brand/blend is great compared to some of the more expensive brands/blends. The only reason I’m not giving this product 5 stars is due to the lid holes as illustrations in my picture. The holes are too small for the size of the spices, so I have use the spoon opening. Not a showstopper because I’ve gotten good at sprinkling the spices correctly, but it could be difficult for someone who’s learning or just isn’t as dexterous. Regardless of this minor flaw, I’m definitely going to buy this one again.

Great Product - Great Value

Too much fennel, lavender and sage
I made it through about a third of the container before I realized I just didn't like it. It makes everything taste strongly of fennel, lavender and sage.I did some research and learned that Herbes de Provence was created in the 1970's as a way to market herbs typically used in Provence. Originally, it did not include fennel, lavender or sage, which are the flavors I pick up overwhelmingly in this mix. I also learned that lavender is not used in traditional French cooking and does not appear in the original LaRousse Gastronomique.Traditional Provençal cuisine just uses the local herbs, and the mixture and amount varies depending on the dish (and quite possibly the season). In this regard, using a prepackaged Herbes de Provence mixture is like using curry powder to make Indian cuisine (instead of the individual spices).

Better for marinades
While i ended up finding a use for this product, it wasn't without a little trail and error.The herbs in this product are very large compared to other herbs de provence spice brands i have tried, so when i tried using it as a rub for my herb blackened chicken, the flavor was great, however i was having to spit out little hard pieces of herb and bay leaf. It could be blitzed down in a food processor but i dont feel like going through the effort.However for marinades, i absolutely love this blend. The larger pieces of bay leaf and lavender really make this impart flavors well in the simple marinade i do. Personally i like to 1&1/2 cup water, 1/4 cup apple cider vinegar,2 tablespoons olive oil, 3tablespoons herbs de provence, 2 tablespoon steak seasoning blend, 2 tablespoon garlic powder and 2 tablespoon onion powder, all shaken up together in a ziplock bag for about 2-4 boneless skinless chicken breasts. The vinegar makes it tender and lightly tangy.In essence, not great for rubs or shake and spice meals, but makes a fantastic marinade blend.
