Puerto Rico: Grand Cuisine of the Caribbean

This is a book with fantastic food photos. Full of interesting stories about the chefs and a bit of history of Puerto Rico..I have tasted many of the recipes, now will get to try to make them myself. This book will make wonderful xmas presents for many of my friends who have visited me in PR over the years and have eaten at some of the restaurents where these chefs presented their cuisine. As an avid reader of Puerto Rican cookbooks, I am always on the look out for an interesting new title. This cookbook, is beautifully photographed and has wonderful stories about the chefs. The recipes are really interesting and have ingredients that I would not normally have seen in my mom's kitchen, look at the pasteles recipe and you will see what I mean. Can't wait to show off our new recipes at a dinner party.

This is a beautiful book, with lots of nice pictures and plenty of narrative about Puerto Rico. The recipes are from San Juan's star chefs and showcase their fusion cuisine. This is not a book of recipes of typical Puerto Rican cuisine--in fact, the number of recipes is pretty low.

An absurdly unreal compendium of recipes and stories from the chefs of Puerto Rico's most atypical "fine dining" establishments. Who goes to these places and who would ever want a cookbook of supposedly Puerto Rican cuisine contining a recipe for terrine of foie gras? How about that tipico criollo favorite, Risotto and Tocino Patties with Osetra Caviar in a Champagne Sauce?OK, there is a recipe for pasteles. Otherwise, what a pretentious waste.

Fun book to read. Some of the dishes feel soulless but a great read especially if you ever feel like seeing Puerto Rican food in a refined light is difficult.

This is a beautiful book, a little more gourmet version Puerto Rican food. It can be a great coffee book because the photos are so nice. Recipe are friendly to follow. Love this book.
