We wanted to recreate a "Claret Cup" and at least one of the recipes calls for gum syrup. Gum syrup is NOT the same as simple syrup (rock candy syrup). Gum syrup has an extra ingredient, gum arabic, that gives the syrup a different texture/mouthfeel. Though the added ingredient supposedly does not change the flavor, I personally thought it tasted different and better, though perhaps the silkiness just enhanced the flavor for me. Whatever the reason, I prefer it to simple syrup and might actually use it in some recipes that call for simple syrup... Definitely if a recipe calls for gum syrup, don't try to substitute simple syrup. There is a difference and the recipe requires it for a reason, so use it.

I love to use this in my old fashioneds because it lends an incredible natural silkiness. Does not lend any odd flavors, either, so it's a great sub for simple syrup if you want to add body to your cocktails.
